Two Slow Cooker Recipes

Okay, folks.  You asked for it, you got it!  In response to my last article, in which I admit that I am a terrible meal planner for my family, I have decided to post two of my children’s favorite recipes made with my slow cooker.  The article, in case you didn’t read it, explains how a slow cooker has re-energized my willingness to feed my children something delicious and thoughtfully prepared.  Although I still pretty much hate making dinner.  😉

Ridiculously Easy Brisket 

3 lb brisket (apx)

1 jar Heinz chili sauce

1 package Lipton onion soup mix

1 yellow onion

1 package egg noddles

Slice onion in 1/2 and place at the bottom of the slow cooker.  Place the brikset on top of the onion, add chili sauce and soup mix, and spread over meat.  Cook for 6 – 7 hours.  Prepare noodles as package directs and serve.  (I want to try with carrots and potatoes, but not sure how that would be….)

Carnitas Tacos

2 lbs country-style boneless short ribs (sold pre-packaged at DeCicco’s, for those of you in the ‘dale)

1 onion

1 8-oz can of chicken stock

spice rub (2 teaspoons each of oregano and cumin, 1 teaspoon each of salt and pepper — can double rub if you are making more pork)

1 avocado

1 bunch cilantro

tortillas – warmed

salsa verde

(You can also use regular red salsa from a jar, corn salsa, etc or make the homemade salsa on the epicurious site….)

Place onion and stock at the bottom of the cooker.  Mix up the rub and rub onto the pork.  Place in cooker for 6 hours.

Pull pork apart and serve with some of the juice from the pan, the cilantro, avocado, and salsa, in a warm tortilla.  (I have it without the avocado and it’s still delish.)
